Over the years, I have come across different posts about the different colors of eggs a breed lays. There are different breeds with different colors of egg shell, but this does not determine the nutritional content of the eggs. The color of the eggshell of chickens is categorized into four different types. These include brown, white, blue and tinted eggshells. It has been observed that the various countries have their specific chart of egg colors they prefer to a consumer, even though prices may vary from one to the other.

For instance, the brown eggs are mostly purchased by consumers in European countries while the white eggs are common in the US market. In China, the tinted and blue eggs are dominating the China market.

The color of egg your breed lays is typically determined by the presence of a pigment called “Protoporphyrin and Biliverdin” in the eggshell. These two pigments are different from each other with different absorption peaks. As a result of this, determining the egg color of the shells cannot be done by merely measuring light at particular wavelengths. Different breeds of hen lay different colors of eggs. For instance, Ameraucana is known to lay eggs with blue colored eggshell; Ancona lays eggs with white eggshells, the breed called Aseel are known to lay eggs with cream or tinted eggshell color while black austral or lay eggs with brown colored eggshells.

Blue Egg Layers: Ameraucanas, Araucanas, Cream Legbars

Green Egg Layers: Olive Eggers, Some Easter Eggers

White Egg Layers: Leghorns, Silkies, Hamburgs, Sebrights, Polish, Lakenvelders, Minorcas, Andalusians

Cream or Light Tan Egg Layers: Wyandottes, Faverolles, Dorkings, Buff Orpingtons, Some Easter Eggers

Brown Egg Layers: Rhode Island Reds, New Hampshire Reds, Dominiques, Delawares, Cochins, Brahmas, Plymouth Rocks

Pink-ish Egg Layers: Light Sussex, Some Easter Eggers, Some Australorps, Plymouth Rocks

Dark Brown or Chocolate Colored Egg Layers: Black Copper Marans, Cuckoo Marans, Blue Copper Marans, Barnevelders

Speckled Egg Layers: Cuckoo Marans, Welsummers
