Kale Frittata – A Healthy Breakfast Casserole

 I make this kale frittata  and my family loves it. We use eggs instead of meat quite a bit at my house because it is less expensive to use eggs for protein and I feel that for me at least, eggs digest a little easier than meat. We have eggs in quiche, dishes like this frittata and we love them made with browned choriso and black beans, rolled up in flour tortillas. Yummy burritos.  When I made this frittata I did add the pepperoni the first time but I have left it out since then and it is still quite yummy.  Delicious recipe from My Kitchen in the Rockies and yet another way to enjoy delicious and nutritious kale.
