If you like to have friends over in the summer and you are looking for something to serve them to drink that isn’t beer, try this delicious rum punch with pineapple for a little different drink. Made with pineapple juice, ginger ale and Malibu rum then pineapple chunks for garnish. Delicious.
The recipe for this punch is from A Night Owl Blog and you can find the directions there. If you are serving this outside at a cook out, but a fresh pineapple to make your chunks with and make some slices of pineapple to throw on the grill. If you have not tried grilled pineapple you have no idea what you are missing. Sometimes when you slice a fresh pineapple they can be a little tart. Grilling the slices makes them super super sweet. You don’t have to cook them long but let them get hot all the way and maybe even get a couple of grill marks on them.
They are so good this way you will want to grill pineapple every time you light your grill. If you have any left over don’t toss it. The grilled pineapple is just as good left over and eaten cold from the fridge later.
