Maple and Walnut Freezer Fudge
I have seen a lot of freezer fudge recipes, mostly peanut butter, chocolate or a combination of the two but this one is a little different. Freezer fudge is a little healthier than regular fudge because instead of loads of dairy butter, cream and sugar, freezer fudge uses nut butter.
Some use almond butter, others pecan or even hazelnut. This one uses walnuts. The nut butters will melt if they get too warm so that is the reason freezer fudge is kept in the freezer. This recipe uses both homemade walnut butter along with coconut oil and maple syrup. It is not overly sweet and it is low carb if you follow the recipe. If you need it a little sweeter you can add sweetener but the carb count will increase.
Because the base of this fudge is whole nuts it is very satisfying so a couple of pieces is usually enough to solve a sugar craving and satisfy a sweet tooth without going carb crazy and wrecking your nutrition goals. It is also delicious and because it is kept in the freezer it is kind of chewy which is another satisfier in its self. The recipe does not make a lot so if you are making for more than one or two people you may wish to double or triple the recipe.
