I love food plants that I only need to plant once. Organic Authority shares 5 different veggies that work this way. I like these five but there are others including some fruits. You can plant only once pretty much any berry bush (raspberry,blueberry etc.) Rhubarb comes back every year, I use the cut and come again method for my kale and it comes back in the spring. Horse raddish, Egyptian onions and even scarlet runner beans which you can use as a green bean early and let them grow and dry and then they can be used as a dried bean up to zone 4. There are lots of fruit and nut trees as well. So there you have quite a few that you could plant this year and harvest for years afterwards.
