If you have a lot of rhubarb and don’t really know what you want to do with it or don’t have time right now to do much with it here is a great idea. Go ahead and stew it with some sugar and then water bath can it so you can  put it up and use it later. Once you have it canned you can put it away until you have time or decide what you want to make with it. Home Spun Seasonal Living shares the directions and says she will put hers up till winter.

Can you imagine opening those jars in winter when it is all cold a dreary outside and smelling that wonder sweet smell of rhubarb… heaven. It isn’t hard to can and put it away you only need the rhubarb and some sugar because you won’t be making jam or anything with it right now so no pectin or lemon juice needed. If you don’t know what you will use the canned rhubarb for there are suggested uses.

I like the idea of pouring it over ice cream or mixing it into yogurt or oatmeal. Rhubarb is a plant that provides every year with little effort on our part and once established can add free food to your pantry or freezer for just a little work of cutting it and putting it up. You can even freeze it and use it later, how much easier does it get than that.
