Pineapple Zucchini Canning Recipe – Can’t Even Tell It Is Zucchini

Turn your huge amounts of zucchini into pineapple to use in recipes that call for pineapple.    When you cook the zucchini in the pineapple juice it ends up tasting like pineapple because zucchini has a neutral flavor.     I think when I make it I will go ahead and add pectin, because I have an old recipe for pineapple cookies that  is like a shortbread cookie with pineapple jam on top.

  I always just stirred the jam into the cookie dough and baked them. They were so good for a long time but then all the pineapple jam I bought didn’t taste like pineapple. I don’t know if they stopped using juice to make it or what happened but every jar of pineapple jam I have bought for the last few years just tastes sweet. I have found that I can use this instead and since it is made with the juice it does taste like you are eating pineapple.
