Have you seen how expensive bacon is getting in the stores? The packages have shrunk untill the is not even a good amount in them. Not a pound anymore thats for sure. So if I have to pay for bacon like its gold I need to find someway special to serve it.
Plain ole bacon and egg is just not worth the price of this rare substance. So I have been searching for a recipe that will showcase bacon instead of relegating it to the side of the plate. And I think I have found the perfect recipe.
Cornbread salad, yep cornbread, with bacon, lettuce, tomatoes, onions, peppers, corn, olives, black beans and cheese. Mmm, now thats a salad that is a whole meal. Sherelle Christensen shares this recipe and uses a cornbread box mix but I will make my own cornbread because I don’t like it sweet.
Other than that one difference I am so going to enjoy this salad and that bacon is going to be so worth its pricey self. If you are like me and looking for special ways to serve that bacon you might also like Grilled Bacon Wrapped Onion Mozzarella Rings they are totally delicious.
