Babaganoush Delicious Eggplant Dip

When the eggplant is ripe it is definitely time to make some Babaganoush. Made with eggplant, lemon and tahini and then you can use spices you like this recipe calls for cumin others call for garlic or you could use both or smoked paprika instead.. This ones calls for cilantro which I love and others call for parsley. Olive oil and sea or kosher salt. It is a great dip because once you have the three main items you can add what ever suits your tastes. You could even add cayenne if you like your food kicked up a notch.
