Banana Carrot Cake Homemade Vintage Recipe - Old Fashioned Baking - The Homestead Survival

Ingredients

1/2 cup butter or margarine

3/4 cup light brown sugar, firmly packed

2 eggs

2 cups unsifted all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 cup mashed ripe bananas (3 medium sized)

1 cup grated carrot

1/2 cup dark raisins

Confectioner’s sugar

Directions:

1. Grease a 9-inch square baking pan; set aside. In a large bowl, cream butter with sugar until light and fluffy.

2. Beat in eggs. In a small bowl, mix together flour, baking soda, baking powder, cinnamon, and salt.

3. Blend in flour mixture alternately with mashed bananas beginning and ending with dry ingredients.

4. Fold in carrot and raisins. Turn into the prepared baking pan.

5. Bake in a 350-degree oven 45 minutes or until a cake tester inserted in {cake comes out clean.}
