While this recipe calls for dulse that has been smoked with apple wood if you can find any, you can also use any seaweed to complete the recipe. Once you mix and knead it you put it in a jar weighed down and leave it to ferment for a week or tow and once it is as sour as you like then split it in to smaller jars and keep in fridge. It will keep for up to a year but the taste is best the first six months.
