If you like quick and easy suppers you need to try this beefy noodle casserole. I stumbled across a recipe that was adapted from a recipe that was again adapted from a recipe ( at this point I knew it was going to be a good one.) Followed another adaption and finally landed at The Pioneer Woman Cooks. Ha, I knew it would be a good one. I have never tried a single recipe from Ree that I did not love.
The woman cooks like she knows me well. This recipe is a perfect example. I like dinners that are quick and easy, not super expensive ( no one will remember what they had for dinner three days from now) so why spend a ton on an ordinary day. Save the big spending for a special meal. This one uses ground beef, noodles, sour cream, cottage cheese and grated cheddar. Not expensive since it makes a 9×13 pan and almost everyone including kids will love it. It is cheesy and delicious and has become a go to in my house. It only bakes for 20 minutes so once you cook the beef and the noodles it is almost over and on the table. You can also make it ahead of time and keep it in the fridge to bake a few days later.
