If you want a taste of Wisconsin try this beer cheese coup from a fellow cheesehead. In Wisconsin there are two foods we love and do really well, one is brats ( I prefer to boil them in beer and then grill on the barbecue) yum the 2nd is beer cheese soup.

You can find it on pretty much all sit down restaurant menus and it is delicious. Tasty filling with some rustic bread, a real comfort food.  Wisconsin is know as the dairy state and if you love cheese you could probably be happy taking a vacation here in summer. If you do be sure to try both brats, beer cheese soup and cheese curds. If you are lactose intolerant well I am so sorry you have to miss out.

This recipe is not at all hard to make and starts off as a lot of good soups do with onions, celery, carrots and garlic.  Then you start adding the good stuff, good Wisconsin cheddar, a nice pilsner and some red pepper flakes and pretty soon you find your self stuffed to the gills and still scraping the bottom of your bowl.
