Blushing Peach Jam Canning Recipe

2 cups crushed, peeled and pitted peaches (about 1 1/2 lbs.)
1/4 cup lemon juice
2 cups red raspberries
7 cups sugar – You can replace the sugar with half the amount of honey.
1 bottle liquid fruit pectin
Few drops Vanilla extract
Blushing Peach jam Canning Recipe
To the crushed peaches add 2 Tablespoons of lemon juice. Let stand.
Crush raspberries and add remaining 2 Tablespoons lemon juice. Let stand.
Combine peaches and raspberries with sugar in a heavy kettle (pot); mix well and bring to a rolling boil, stirring constantly. Boil one minute, remove from heat and add pectin.
Stir and skim for several minutes to prevent fruit floating. Add extract.
Pour mixture into hot sterilized mason jars. Add mason jar lids at once and process in boiling water (212*F.) for 5 minutes. (personally I would process or 10 minutes)
Remove from water bath canner and let cool.
