Better than butternut: roasted delicata squash recipe. Saw this recipe for these last year and decided to try it because the peel is also eaten, so much easier to work with. This one sounds good but the one I saw and simply can not find now is what I made and its so good. You clean and cut the same but then slather with butter, sprinkle brown sugar and a generous shake of sea salt on and then roast the same. Oh my, these are delicious.
