If you still have or can get some plum tomatoes you can put up some of this tomato, basil and roasted garlic sauce so that you can savor the taste of summer after all the sun ripened tomatoes are gone. Our Best Bites shares this recipe and I agree with them.
I wouldn’t waste the sauce with just pouring it over pasta. Roasted garlic is so delicious and has a sweet taste after roasting that you will want to really be able to taste. This would be a perfect dipping sauce for bread sticks. You could also use it to simmer chicken in. What I will do with it is simmer Italian sausage links and have them on French bread. I can imagine the taste right now.
The spices of the sausage blending with the basil ans roasted garlic and the bread soaking it all in. Mmm Mmmm Mm, I can’t wait. To make the recipe you will need 12 pounds of plum tomatoes and the recipe will make 6 pints of tomato, basil and roasted garlic sauce.
