Instead of bread, tortilla or pita this wrap is done with red cabbage leaves. The filling is an amazing mixture of turkey breast, corn, tomato, peaches, cucumber, cilantro, brown rice and chipotle sauce. Not only is it a feast in ingredients it is a feast for the eyes. Look at all the color. It makes you feel like you are ready to eat a rainbow of good tasting food. For even more color chop some of the cabbage to go in the stuffing. These would be so good on a hot day when you want something filling to eat but don’t want to turn the stove on and especially the oven.
While I know this would be really good with turkey breast I made it with left over rotisserie chicken and it was scrumptious, so you could use chicken or turkey. I was glad for the change to do an easy meal and to use up the chicken. Dish Tales shares this recipe. I have no luck finding sumac at my area stores but luckily I find it here. I am not sure what you could use to replace it. It has a fruity, sour kind of lemon taste, we use it on fish tacos and it was really good in these wraps.
