Due to the price of beef now days we are eating a lot more chicken at my house. I do try to a lot more meatless dinners just to have beef once in a while and it really isn’t all that hard. We have beans and cornbread which makes a very filling and satisfying meal. I cook the dry beans myself so I save a lot this way and I always cook a lot of beans (as in a whole pot full) because after we have the beans and cornbread I like to make the refried beans and once I have them hot and smashed in the skillet I add a big handful of grated cheddar and stir till it melts, then I make some spanish rice and we have the cheesy beans and rice for dinner. We eat them with tortilla chips and it again is a very tasty and filling meal.
If I still have some leftover beans I put them in a freezer bag and freeze them till I need them, so much cheaper to buy the dry beans and cook them then freeze them that to buy cans of pre-cooked beans. We also have eggs at least once a week, weather as egg salad or omelets. Then we have chicken….a lot. So I am always on the lookout for different ways to make it. This recipe for chicken breast stuffed with cream cheese mixed with green onion then wrapped in a slice of thick cut bacon and then baked is a brand new favorite added to the rotation.
It is quick and easy to make but it still seems like a special meal because it is something very different from the dishes I usually make that everyone love it.
