Chicken Roll Up Taquitos With Creamy Avocado Dip

If you love Mexican food the way we love it at my house you will love this easy recipe for chicken roll up taquitos with an avocado cream on the side. This is a perfect recipe to make when ever you have some left over chicken. I have made it with left over rotisserie chicken and even with some grilled chicken breast. Both are good. I think the grilled was the best because we had brushed the chicken breasts with chipoltle while grilling and the meat had a really great flavor even before adding all the other ingredients.

These are really good and not hard to make, especially if you have the left over chicken because then you only need to de-bone if it has bones and then shred the meat. Oh My God Chocolate Desserts shares this recipe. She rolls them and then bakes then in the oven. They are really good that way and I have made them in the oven but I like to roll them with the ends folded in and then fry them till golden in a skillet. I like the crunch tortilla sometimes too. Give them a try and I think you will love them. The avocado cream is really good too. We like it with tortilla chips as a dip.
