1 cup sifted enriched flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cups milk – (1 cup is better than 1 and 1/4 cup)
1 cup whole-kernel corn
2 tablespoons melted shortening.
Sift together flour, baking powder, and salt. Beat egg. Add milk, corn, and shortening. Add to flour mixture and mix well. Cook on a lightly greased hot griddle.
