Dairy Free Lemon Curd

Dairy free lemon curd recipe for the folks that love lemon but can’t eat dairy products. Lemon curd is made with butter and folks that are allergic to dairy products usually have to pass on by but with this recipe you can make it at home and use coconut oil to replace the butter so that even dairy free folks can eat it.

Slathered on a muffin or on toast, curd is so delicious. This recipe can be made with any citrus. The recipe comes from Dog Hill Kitchen and she made it with grapefruit. I am sure it would be delicious made with pick grapefruit especially if you are like me and love pink grapefruit. This one though I made with lemon because I had some lemons and didn’t have any grapefruit in the house.

I love lemon curd and I make mine with butter but when I saw you could make it with coconut oil I had to try it. It turns out very nice and if you didn’t know it is not made with butter you would probably never guess/ I suppose if you left it sit out on a hot day the coconut oil would probably soften and be a give away but as long as it stayed chilled I don’t think anyone would even know.
