When I saw this recipe for rhubarb swirl popsicles I rushed outside to see if I can squeeze another couple of cups of rhubarb out of my plants. I think I can and now I am itching to get to the store to pick up some coconut milk so I can try these rhubarb swirl popsicles. They looks gorgeous and since they are non dairy almost anyone could enjoy them. Hungry Girl Pro Vida shares the recipe and says that for the prettiest color to use the reddest rhubarb.
