I love carrot cake, especially when it has pineapple in it. This recipe is even better than that because it has pumpkin puree in it as well. With pumpkin, and carrots, walnuts, pineapple and coconut this cake is almost healthy. This gorgeous cake would be such a great addition to the thanksgiving table. It has the fall colors and it looks totally scrumptious, but I also think it is good enough to make any time of the year.. Gold Medal Flour has this recipe.
