Make Some Eggplant Jerky

Every time I have eaten eggplant I didn’t like it. I have had it at Chinese buffets and found it sort of slimy or slick or I don’t know how to describe it but the texture was very distasteful to me. I then tried a stuffed eggplant recipe from an Indian lady that lived near me and always made my stomach growl when she was making it. Nope, it smelled way better than it felt in my mouth.

I don’t know why I don’t like it but I just don’t and I am sorry because it looks so pretty in its purple splendor. Then I saw this recipe from Everyone Eats Right for making eggplant jerky. I plan to try making this soon. Eggplant is on sale in the fliers from the stores so it seems like a good time to have stumbled across this recipe.

I think maybe the eggplant will be more palatable to me dried since it won’t have that slick feel to it anymore or at least that is what I am thinking. I will pick up some eggplant and give it a try.
