Ingredients:

1 peck green tomatoes        (Peck = a peck is equal to 10 to 12 pounds, or about 32 medium tomatoes)

1 peck red tomatoes

1 dozen red sweet peppers

1 dozen green sweet peppers

1 dozen hot peppers

1 bunch celery (1 bunch of celery typically contains 8 or 9 medium ribbed stalks and weighs about 1 pound)

1 bunch carrots (approximately six to eight topped carrots, which are sold by weight, in a 1-pound bag – A bunch of six to eight medium-sized carrots produces approximately 3 cups chopped and 2.5 cups grated)

2 dozen onions, 2-inch diameter

3 pounds light brown sugar

2 pounds white sugar

3 quarts vinegar

1 – 1 5/8 oz. box pickling spices

Directions:

1. Put pickling spices in cloth and put in a pan with vinegar and sugars on the stove.

2. Add all vegetables which have been chopped fine or put through coarse sieve of food grinder.

3. Let boil until right thickness for relish.

4. Pack in hot sterilized jars and process for 15 minutes.
