Here is another way to use up any surplus tomatoes you may be lucky enough to have. I don’t have any surplus because most of mine are still green ( no idea why except maybe because it has been a cool summer) but if you have some that you want to use up you could try this recipe that can be canned for the pantry or if you make a small batch it will keep in the fridge for up to a month. This recipe is shared by Mennonite Girls Can Cook and while they call it a jam or relish I see it as more of a chutney because it has the tomatoes, a little sugar and corn syrup it then has red onion, garlic, ginger and chili flakes.
When I think of jam I think of a spread for toast or other bread but this to be sounds more like a condiment for topping a burger to give it a little kick that you don’t get from ketchup or as a side next to meat. It would probably be good if you poured a jar over pork to cook in the slow cooker too. Either way it sounds like a nice way to use extra tomatoes in a little different way.
