Homemade Corned Beef Hash

       Do you love corned beef hash with egg on top? I know I do but I am not so fond of the canned corned beef has anymore because it is more like minuscule potato cubes with even tinier bits of corned beef, so tiny you can’t even taste the corned beef.

So if you have gotten tired of this pretending to be corned beef hash in a can like I have try this recipe for homemade corned beef hash from Mrs. Wheelbarrow. She uses left over corned beef and she also adds sweet potato and onion to her hash. I love it with the onion but not so much the sweet potato.

     You can make it the way you like it. I am with her on not added bell pepper but some folks like it and if you do then throw some in. She also adds poached egg while I prefer mine over easy. That is the wonderful thing about a great recipe, it gives you the basics and then leaves you to make it your own. This is such a warm and hearty breakfast or even a great lunch, perfect for weekends when you have time to sit down and enjoy it with some thick sliced buttered toast. She also gives instructions on making your own corned beef.
