Delicious fried mushrooms that you can make at home. do you love fried mushrooms? I do and have until now usually gotten them at a drive in restaurant here in town. They are good but the get just a bit soggy on the drive home from steaming in the little bag.
Now my daughter has shared with me how she makes her own at home. She says they taste great because you control the cooking time and she likes the mushroom to not be over cooked. She says,
The best part is they stay fresh so you get the yummy soft crunch of mushroom after the crisp crunch of the breading. The look and sound delicious and I am going to try making them as soon as I go to the store and buy some mushrooms.
For each package of fresh mushrooms you will need :
2/3 cup flour
1 teaspoon cornstarch
1/2 teaspoon baking powder
Salt, pepper and paprika to taste
Water- add a small amount at a time till it is similar to pancake batter
About 1 cup of panko crumbs (I used plain)
Vegetable oil (for frying)
Before you start your mushrooms, heat oil on med-high. Mix flour, cornstarch, baking powder and spices. Slowly stir in enough water to make a batter. Dip mushrooms until covered and allow excess batter to drip off. Gently toss or roll battered mushrooms in panko crumbs. Place breaded mushrooms in oil and fry until golden brown. Make sure to scoop out excess panko or it’ll turn your oil dark and make your mushrooms look brown and not golden.
