Homemade Peanut Brittle Double Batch Recipe

Peanut brittle is a favorite holiday treat in many home across the US and this recipe is great because it makes a double batch so you can have some for your family and some to gift or give to family and friends.

Peanut brittle is one of the oldest of known homemade treat that everyone at some time in their lives got to enjoy the sweet to this heavenly treat. Another reason is because it always makes you think of your grandma no matter who happened to make it for you.

This will help you make delicious peanut brittle right in your own kitchen and it is really pretty easy to make. The recipe for making a double batch of homemade peanut brittle is from Betty Crocker. It is much easier to make peanut brittle with a candy thermometer. While you can make it without and there are instructions for doing so. I prefer to use the thermometer because molten sugar is extremely hot and very sticky so I want to avoid getting it on me at all costs. The thermometer allows me to not mess with it and just watch the temperature.

There are 2 things I do a little different from the recipe. The first is that once the sugar, water and corn syrup come to a boil I put a lid on the pan and let the mixture steam for a minute or so. This ensures that there will be no sugar crystals left intact to ruin the brittle.

Second I like a mixed nut brittle at Christmas so I use these mixed nuts instead of peanuts,( I like that there is enough to make the candy and enough left over to make it again or to have for eating) but that is a personal choice so pick what you prefer. You can even choose a different nut brittle entirely like cashew brittle or pecan brittle.
