If you have a lot of radishes in your garden this spring why not try some homemade pickled radishes. These are super easy to make and since they are refrigerator pickled there is not even any canning involved. Make them in small batches because they will only keep a few days. They will stay crunchy though.
All you need is salt, vinegar and sugar along with your radishes and if you want to add some onion and dill you can do that as well. The recipe is from BHG and you can find all the measurements there and be on your way to having homemade pickled radishes in your fridge. They go great on an appetizer tray or use them as pickles on sandwiches. They are also good in tossed salad. If you are making your pickled radishes with radishes from your garden then here is a recipe for pickling the greens too.
Why throw them out when you can pickle and eat them. These also go into the fridge so they only take minutes to make. Radish is one of the first crops ready to eat in the spring and I like to use it in as many ways as I can. It is so enjoyable to eat the first veggies out of the garden in the spring.
