Pimiento cheese spread is a delicious cheese spread that is super popular in the south. I grew up in Ohio and we had it a lot and loved it. I live in the upper mid west now and I never see pimiento cheese in the store so I needed to find a recipe to make my own because I get cravings for it. Some will only use sharp cheddar other like mild and then some like a mixture of both. Some make it exactly the way she does in the video. Just may, cheese and pimientos. Then some add onions, some add onions and diced jalapenos, some add bacon bits. It is all a matter of either your own tastes or what recipe your grandma passed down. But as long as you have the cheese, mayo and pimiento you are good to go.
Any additions are just to your own taste preferences. This cheese spread is so good on crackers, on celery but my favorite is to spread it on Hawaiian bread. The saltiness of the cheese and the slight sweetness of the Hawaiian bread are a match made in taste bud heaven and I love it.
