I came across this recipe a couple of years ago and I made it just the other day and thought I would share it with you all while I was thinking about it. The recipe calls for shrimp and I do make it with shrimp but I also make it a lot of the time with chicken. If you make it with chicken it is best to cut the chicken into cubes and I like to brown if before adding to my rice. Closet Cooking shared the recipe a few years ago and it is definitely a keeper. You should make your rice the day before anytime you will make fried rice. Or if you have leftover rice from say a take out Chinese meal or some other meal you made at home this is a good way to use it.
Fried rice is very hard to make if your rice is not cold from the fridge.Other than that this dish is super simple. The hardest part to it is dicing and chopping the other ingredients that go in it. It has every thing you want in a dish. A little sweet from the pineapple, a little spice from the chili and some crunch from the cashews and lots of color and flavor. I don’t use the fish sauce in mine but I do use soy sauce in it. This is a super simple yet totally delicious meal and its ready in just minutes.
