Homemade sausage with jalapeno and cheddar for folks that like sausage that is a little bit spicy. If you like sausage of all kinds, from Italian to venison you will love this recipe. It is a pork sausage but it is also filled with cheddar cheese and jalapeno pepper. It is absolutely delicious.

You can grill them or just pan fry and eat them with or without the casing. We love them on a hot dog bun with mustard and sauerkraut. This recipe is from All Day I dream About Food, who did the tutorial for The Kitchen enthusiast. While she used a Kitchenaid, I have never been able to afford one so I have a different meat grinder that came with the sausage stuffer and works really well for what I paid.
It is not hard to make sausages once you have a grinder and learn to cut your meat into the size that will fit in the hopper and then lay it out on a cookie sheet and put it in the freezer to chill well. The meat grinds very well if it is solidly cold. Once you have your meat ground then you add all the other items in the recipe and use the stuffer to fill the casing if you want the casings. Some sausages I put casings on and other I don’t bother.
Breakfast sausage I just freeze in one pound packages because we eat sausage patties for breakfast. These I like in the casings and we leave them on when we eat the sausage. This recipe is delicious and while it takes time to make it is not hard to make.
