Perhaps one of the most intimidating aspects of homesteading is preserving meat. A good way to get started is by making jerky, and one of the simplest types to make are venison jerky sticks. To do this project, you’ll want to already have some experience grinding meat and using a smoker.

Perhaps one of the most intimidating aspects of homesteading is preserving meat. A good way to get started is by making jerky, and one of the simplest types to make are venison jerky sticks. To do this project, you’ll want to already have some experience grinding meat and using a smoker.

You Will Need:(Ingredients)

• Venison mix (approximately 30lbs). For this recipe, use 80% lean deer meat and 20% pork trim.

• Meat grinder

• Smoker

• Cooler/Industrial refrigerator

• Seasoning

• Link casings

1. Grind your venison/pork mixture with the meat grinder.

2. Add water and spices ‘to taste.’ The amount of water and type of seasonings you use will be up to you.

3. Using a finer setting, grind the mixture again, adding the seasoning and water.

4. Let stand overnight in a cooler or refrigerator. This will allow it to cure.

5. Pack the cured meat into the meat casings.

6. Smoke the sticks by placing them about half an inch apart in the smoker at about 115 degrees Fahrenheit.

7. After two hours, you can add hickory chips to increase the smoke.

8. Continue to smoke them for about another 5 ½ hours. During this time, the temperature will increase naturally to roughly 165 degrees.

9. Remove from the smoker and allow them to cool for 1-2 hours. Once cool, refrigerate the sticks overnight.

10. Cut the sticks to size and seal the casings.

And you’re done! The process is simple enough, though fairly labor intensive. You’ll reap the reward.
