If you bake a lot of pies and want to save some steps, try this recipe for a large batch of frozen pie crust. The recipe make enough for 20 pie crusts.
Then you freeze it in balls of one crust until you need it. This crust can be used for pies, quiches, pot pies or even roll it out, sprinkle with cinnamon and sugar and cut into strips or shapes and bake. The kids like these as cookies and I like that the only sugar is the sprinkle on top. I always did that with the left over dough when making a pie and they used to as me for pie cookies because they like them. Making a pie is not very hard or involved except for the crust. At least half of the pie making effort goes into the crust so making it up and freezing it ahead of time will make baking pies so much easier.
This recipe is from Six Figures Under and she says she has had this crust in her freezer up to a year and it was just fine. This would be a great way to get ahead of the holidays when there are pies to be baked for both Thanksgiving and Christmas. Having pie crust frozen and ready to go would be a great time saver especially when there are so many other things to do at that time of year.
