The perfect lemon cheesecake. This recipe is so much better than the super sweet lemon meringue pie we are all used to eating. The ricotta makes it lighter and fluffier and with the lemon zest in both the crust and the filling you still get all the lemon flavor without the super sweetness. I have noticed that a lot of other countries don’t have quite as sweet desserts and we seem to always have. Italian desserts and a lot of Mexican desserts while containing sugar are only mildly sweet unlike our over sweetened ones. Sometimes I like something that is not quite so overly sweetened. This is one of the recipes I prefer less sweet. This cheesecake is perfect and it was very easy to make. 12Tomatoes shares the recipe.
