Here is a great recipe for when you want to make your own spicy Italian sausage. The recipe in the video is for spicy sausage but you can adjust the spiciness to suit you if you don’t like it spicy, leave out most of the cayenne.
The sausage has fresh parsley leaves and red pepper seeds so it has a lot of color to it and a variety of spices and herbs like paprika, garlic, anise, oregano and ground fennel seeds along with salt, pepper, cayenne, time and then red wine or you can use red wine vinegar. Once you have ground the meat and added all the other ingredients and mixed it together well you should make a small patty and fry it to taste test your sausage.
If you think it needs more salt or more spice you have the chance to make your adjustments. Then you can either but it into casings or into freezer containers. Emoney Blue shows how to make this sausage and it looks delicious. I use Italian sausage when I make Zuppa Toscana, and it would be nice to have homemade sausage to use in it. I think I am going to try this recipe because it looks so good and seems easy enough to make.
