This recipe for Mexican corn on the cob will become a fast favorite once you have tried it. We find this at all the summer festivals and carnivals and state fairs that come to our area and we love it so much we have learned how to make it at home so we can have it whenever we are going to be grilling out.
With Memorial Day coming up I was glad to find this version along with gorgeous pictures from Seeded At The Table. We always made our spread with mayo and lime juice but I like the sour cream and garlic salt in this recipe and I will be trying it next time we make this corn, because while ours is delicious I can imagine the sour cream and garlic would give the corn much more flavor.
This recipe is sprinkling the corn with a Mexican cheese and paprika or chili powder. We do the cheese and then we buy from the Mexican store a bottle of spice called chilito con limon which is chili powder with dried lime, the lime really makes this corn on the cob taste good.
Next time you are making grilled corn on the cob do your taste buds a solid and ditch the butter and make this flavorful Mexican corn on the cob, it is corn on the cob at a whole new level of taste. Delicious .
If you are having a little more formal type dinner you could try Esquites, A Delicious Corn Salad From Mexico, with similar ingredients and taste it is corn off the cob that can be served as a side and it is just a delicious as the corn on the cob, just not quite as messy.
