No Machine 3 Ingredient Gingerbread Ice Cream

Learn how to make this homemade,  no machine 3 ingredient gingerbread ice cream and you will make it over and over again. If you like ginger cookies, or ginger snaps you will love this ice cream.  While this recipe calls for only the three ingredients I like to add a half teaspoon of powdered cloves and half teaspoon of ground cinnamon to the mixture.

No Machine 3 Ingredient Gingerbread Ice Cream

This is really good and I love ginger snaps so that is the cookie I use when I make this ice cream. One other change that I make is that I turn my sweetened condensed milk into dulce de leche before adding it because it gives the ice cream a much richer depth and a bigger taste.( I will add a video at the bottom to show you how to make the dulce de leche.) The ice cream recipe comes from Kackerlacka on Instructables.

They also use this ice cream making method to make blueberry ice cream. I have used it with fruits, candy pieces and other cookie flavors. It works well with most any cookie. Since I have never seen any ginger flavored ice cream in the store it is nice to have this recipe to be able to make it at home. It goes really well with warm pie, or with caramel sauce over it. So if like me you love ginger cookies and ice cream this will be a winning recipe for you too.

The fact that you don’t need an ice cream maker was a big plus for me to try the recipe out when I first stumbled across it. I love not having to get the machine out and trying to remember to buy the salt for it. This just gets mixed and then poured into a loaf pan and popped into the freezer to harden.
