Old Fashioned Hot Dandelion Dressing with Bacon From 1946

This sounds like an amazing dressing recipe that is served over dandelion greens. From an old cook book called Secrets From Pocono Kitchens Lost American recipes shares this one. It sounds delicious. The dressing is made from bacon, vinegar, sugar and water, egg and flour and then it is poured over cleaned dandelion greens. Now is the time of the dandelion so I am always on the look out for a new recipe to use this free wild food. Just make sure that if you forage for wild edibles that they have not been sprayed with pesticides or weed killers.

This dressing sounds similar to one I had in a restaurant once. It was a hot bacon dressing that was poured over a mixed salad that had popcorn chicken in it and it was extremely delicious. I think I will keep this one to use both with the dandelion greens and later for the popcorn chicken in mixed salad. If it has bacon in it I know it will be a winner at my house.
