Even though my family are meat eaters sometimes I go looking for a recipe to get a more vegetable based meal into them. I was scouting for one today and found this one. So many veggies and they are roasted. I love roasted vegetables, the roasting seems to really bring out their flavors. When I serve up plates full of frozen or canned veggies I don’t get much enthusiasm but who could possibly turn up their nose at such a gorgeous dish as this. Sometimes you just have to put those veggies in make up and heels and I am so glad that The Cafe Sucrefarine shared this recipe.
