Paleo Friendly Creamy Strawberry Truffles

For a lot of folks that try to eat healthy or at least healthier one of the hardest things to give up are the sweets. I know I for one have a raging sweet tooth. I love sweet things but when I can find something like these gluten free, vegan and grain free creamy strawberry truffles I am always happy because I can eat something sweet without so much guilt. While these are not sugar free they are sweetened with just 2 T of maple syrup. The recipe makes 12 truffles so I double the recipe and then freeze half for another time or to have on hand in case someone stops by unexpectedly. The riper and sweeter the berries the more flavor your truffles will have , if your berries are not super sweet and ripe you can add a little strawberry extract to give the truffles more flavor.

Since these are made with coconut butter you will need to keep them ion the fridge or the freezer. My Whole Food Life shares this recipe and provides a link for the recipe to make your own homemade coconut butter as well. If you don’t want to make your own coconut butter you can buy it already made. These truffles are so good and you can make them in other flavors. Blueberry is really good and so are cherry. So the next time your sweet tooth is raging make a batch of truffles and sooth that savage beast.
