Sometimes a creative twist on traditional recipe such as Pumpkin Enchiladas can open your mind to trying other culinary adventures of clean eating. I have to say after trying pumpkin and also butternut squash in place of tomatoes in pasta dishes sauces, I am jumping enthusiastically head first into this recipe. Pumpkin and butternut squash have just as much flavor but are not acidic like tomatoes.
