Love and Olive OIl shares a recipe for shells stuffed with ricotta and pumpkin. Since pumpkins are around and plentiful this would be a nice recipe to try right now. You could bake and puree your own pumpkin instead of using the canned puree called for in the recipe, I am not sure I would puree it all the way either. I think some small bits of pumpkin would taste good with the ricotta ( just a little more texture)
