If you are lucky enough to have a pecan tree or someone who does and will give you some pecans then you are very lucky and can start putting up pecan pie filling. Once you have canned it and put it on the shelf you will be ready to bake a pecan pie when ever the fancy strikes you.
You could also use it to make this Pecan Pie Topped Bread Pudding. I don’t live where the pecans grow any more. I did live in Fort Worth at one time and we had a pecan tree in our yard. It was a younger tree and while it did have pecans every year they were small. When I would walk my kids to school there was a huge old pecan tree that grew so large it partially hung over the street and it would drop pecans that were so large, they were more the size of a walnut.
We used to gather any that had not been crushed by cars on the walk home in the after noon. We never really got enough to can or make any thing with but we sure did enjoy eating them once we got home. I was so surprised at how much oil is in a big pecan. They are just full of oil and they have such an awesome flavor.
