Quesadilla Bacon Lettuce and Tomato Style My New Go To BLT
If you love a blt and you also love quesadilla, welcome to the latest addition to my favorite lunch, dinner or snack. I haven’t tried it for breakfast yet but I am going to and I am pretty sure it will be a winner for breakfast too. It has bacon and cheese (melty, gooey cheese) inside and then the fresh stuff on top and then there is a tart lime sour cream sauce to drizzle over it and all I can say is yum yum and double yum.

The recipe is from Nick at Macheesmo and he has created a simple yet delicious alternative to the blt sandwich. I think the flavor of the bacon really comes through better in the tortilla than in bread and that sour cream lime sauce is so good. I keep wanting to have some on salads and vegetables. Next time you are craving a blt try this blt quesadilla instead and see if it becomes your go to blt.
This and a big glass of Horchata and you will have one happy belly. It is nice that as you make them if you need to make a bunch you can keep them in a low oven to keep warm until they are all done so that the whole family or group can eat together.
