This Raw Carrot Paprika Salad Vintage Recipe is a delicious blast from the past recipe from an old newspaper clipping. If you wanted a recipe outside of your family, the newspaper was a common source before the internet.
3 Carrots (about one cup)
1 Teaspoon Minced Parsley or Onion
1/4 cup Chopped Peanuts
Pinch of Table Salt
Pinch of Watkins Paprika
Salad Dressing of your choice
Iceberg Lettuce (Spring mix of dark greens will work too)
1/4 cup chopped cucumber pickles – sweet or sour (sour means Dill)
1. Grate the carrots, pass through a food chopper (food processor) or finely chop using a sharp knife.
2. Mix with the minced parsley, chopped peanuts, chopped pickle, and seasonings.
3. Add enough of your favorite salad dressing to moisten generously.
4. Chill and serve piled high on iceberg lettuce. Green spring mix would be delicious as well.
