If you enjoy charcuterie you will love making your own because it will save you loads of money over buying already cured meats. This article will tell you how to turn an old refrigerator into a meat curing set up. Curing meat is the process of removing the water content from it.
You can make different cured meats using pork, beef, venison and even duck breast. Matti Kaarts tells you how to set up the fridge with a temperature/humidity sensor to maintain the proper amount of humidity. The fridge would keep things too cold so you need a temperature controller that will shut the fridge off and on to keep the temp at around 60 degrees. You will also need a humidifier and a humidifier controller. Those items along with the fridge is all you need to make the set up. Once it is done you can begin making your own cured meats.

How much you will love being able to make your own pancetta, bacon, salami and sausages right there at home for so much less that what you would pay at the store. One of my favorites is pancetta. It is similar to bacon but where bacon is smoked after the cure, pancetta is not. It is so good in pasta dishes and salads.
