Roasted Vegetable Tian Recipe

This is a recipe for a beautiful dish of roasted vegetables that looks as good as it tastes. The mixture of onion, zucchini, Roma tomato, garlic,yellow squash and potatoes topped with Parmesan looks beautiful and is a great dish as either a main for vegetarians or a healthy side dish. It is a simple dish to put together, simply saute the onion and garlic then slice and layer the other vegetables, add the spices  and oil then bake.
