Simple Roasted Vegetable Rainbow Recipe

Add some color to your next meal with this recipe for simple roasted vegetable rainbow. This is very colorful and it makes you just want to sit down and taste every color. The recipe uses no oil so it is low calorie. You can eat the veggies just like they are or if you want to make a meal of it and you are a meat eater you can do what I do and add sliced smoked sausage to the pan when you roast the vegetables.

The veggies also make a great side dish to roasted or rotisserie chicken or fish. This and some fresh fruit for dessert makes a great low cal meal and it is light which is great for muggy summer meals when you just don’t want to be stuffed while it is so hot. Lets you save room for that cold iced tea. If you like it a little spicy, add some sliced jalapenos to the mix. This recipe is from Simple Vegan Blog.
